Layered Mexican Dip
- 2 avocados,peeled and mashed
- 2 tablespoons lemon juice
- 2 tablespoons salsa
- 2 tablespoons onion
- 2-1/2 cup sour cream
- 16 oz black bean dip or refried beans
- 6 scallions,chopped
- 1 cup pitted black olives
- 8 oz regular or low-fat cheddar cheese,shredded
- tortilla chips
Instructions:
1. Mix together: avocado, lemon, salsa, onion, and 1/2 cup sour
cream until mixture is smooth
2. Using 2 large platters or 2 9x13 pans, place 1/2 bean dip on bottom of each pan.
3. Smooth 1/2 guacomole mixture over bean dip.
4. Place 1 cup sour cream on top of guacomole.
5. Layer tomatoes, scallions, olives, and cheese
6. Chill platters and serve with warm tortilla chips.
