Caribbean Shrimp
- 1 - 2 pounds fresh shrimp, the larger the better
- 4 fresh oranges, juiced
- 1 lemon, juiced
- 1 cup fresh pineapple juice
- 1inch piece fresh ginger (finely minced)
- 2 tablespoons fresh cilantro (roughly torn)
- 1 - 2 habanero peppers (depends how hot you like it)
- pinch kosher salt
- pinch fresh ground black pepper
Instructions:
Mix together all ingredients except shrimp. Let sit in a glass
(non-reactive) bowl in refrigerator over night (at least 6 hours). Peel,
devein, and butterfly the shrimp. Place in marinade and return to
refrigerator for at least an hour... more if you have the time. When ready
to cook, just before serving, preheat oven to broil. Drain off marinade
and place shrimp in a glass baking dish that has been lightly coated with
oil (so they won't stick). Place in oven and broil until the shrimp are no
longer translucent... about 10-15 minutes. Serve warm by themselves or
with a fresh fruit salsa.
