Irish Currant Soda Bread
Irish Currant Soda Bread
- 4 Cups Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1 Tablespoon Baking Powder
- 1/4 Cup Sugar (optional)
- 2 Cups Currants or Raisins
- 1/4 Cup Butter or Margarine
- 1 Egg, beaten
- 1 3/4 Cup Buttermilk
Instructions:
In a large bowl, stir together the flour, salt, baking soda,
baking powder, and sugar.
Cut in butter with knives until mixture is crumbly.
Add in the currents or raisins.
In another bowl, combine the beaten egg and buttermilk.
Stir the egg milk mixture into the dry ingredients. Do not
over mix.
Turn dough out onto a floured board and kneed
until smooth (2 to 3 minutes).
Divide dough in half and shape into two smooth round loaves.
Place each loaf into a greased 8 inch cake pan. Press
into pan to make the dough fill the pan.
With a floured knife cut a 1/2 inch (1 cm) deep cross in the top
of each loaf.
Bake the bread at 375F for 30 to 35 minutes until browned.
Turn out loafs onto cooling racks and let cool.
Enjoy warm or cool with your favorite jam or marmalade.
