Breakfast Casserole
- 20 ounce bag frozen hash browns, thawed
- 8 tablespoons. melted butter
- 2 Cups Monterey Jack cheese, grated
- 1 Cup Cheddar grated
- 10 Eggs
- 1/2 - 3/4 Cup milk
- 1 1/2 Cups cubed ham
Instructions:
Preheat oven to 425 degrees.
Press hash browns into a 11x7" baking dish, brush with melted butter and sprinkle with salt and pepper. bake 25 minutes at 425 degrees.
Mix together eggs, Monterey jack cheese, milk and ham. Pour over hash browns. Bake 15 minutes covered and 20 minutes uncovered at 350 degrees.
Sprinkle cheddar cheese over top, return to oven until melted.
Serves 6-8
