Almond Cookies
    
Almond Cookies
- 3/4 cup blanched almonds, finely ground in a food processor
 - 3/4 cup sugar
 - 2 large egg whites
 - 1/2 teaspoon almond extract
 
Instructions:
Combine all ingredients in a bowl and mix to form a thick, sticky
dough.  Drop about 1/2 teaspoon per cookie on a baking sheet
lined with parchment paper.  Bake in a preheated 350F oven for
about 15 minutes, until lightly browned around the edges.  Remove from
oven and allow to cool for 5 minutes before lifting with a knife or
spatula. 
 Makes about 3 dozen.
