Cinnamon Cookies
Cinnamon Cookies
- 1 cup unsalted butter, sliced
- 1 cup sugar
- 1 Tablespoon cinnamon
- 1/2 teaspoon salt
- 1 egg yolk
- 1 cup flour
- 1 cup cake flour
- 1/2 cup pecans, chopped fine
Glaze:
Instructions:
With steel knife in food processor, combine butter, sugar, cinnamon,
and salt. Process 90 seconds. Add egg yolk. Mix 30 seconds. Add
flours, mixing with on/off. Stop when flour has almost disappeared.
Fold in nuts. Divide into three 4-inch cylinders and refrigerate.
When ready to bake, sprinkle baking sheets with water and shake off
excess. Slice dough 1/4-inch thick; place on baking sheet. Press thin
with hand. Combine egg and salt and brush glaze on cookies. Bake 8-10
minutes at 350.
