Hole In The Wall Restaurant Jalapeno Cheese Cornbread
4 Cups white cornmeal
1 Cup flour
2 Teaspoons salt
4 Tablespoons baking powder
10 eggs
96 Ounces cream corn
50 Ounces sour cream
6 fresh jalapenos, diced
3 Cups cheddar cheese, grated
Instructions:
Mix all dry ingredients together. Add eggs, sour cream and jalapenos. In
pregreased muffin tins, pour equal amounts to fill portions approximately
2/3 full. Top each muffin with grated cheese and bake in a preheated oven at
275 degrees until golden brown.
