Chicken Cacciatore
- 2 whole chicken breasts, halved and skinned
- 1 tablespoon oil
- 1/2 cup chopped onion (1 medium)
- 1 clove garlic, minced
- 4 ounce mushrooms or 1 1/4 cup
- 1 (16 ounce) can stewed tomatoes
- 1/4 cup white wine
- 1/2 teaspoon salt
- 1/2 teaspoon rosemary
- 1/4 teaspoon pepper
Instructions:
In large skillet over medium-low heat, saute chicken in hot oil until lightly browned but not done; remove and set aside. In same skillet, saute onions and garlic in pan drippings until lightly browned. Stir in mushrooms, tomatoes, wine, rosemary, salt and pepper. Bring to a boil; add chicken. Reduce heat to low; cover and simmer occasionally about 1 hour or until chicken is tender.
