Coconut Pie
- 2 tablespoons plus a little more flour
- 1 cup sugar
- 3 egg yolks
- 2 cups milk*
- 2 tablespoons butter
- 1 teaspoon vanilla
- 3/4 can (sm) coconut
Instructions:
Mix all ingredients except coconut in a pan and heat on low heat until thickened. Stirring constantly. Add coconut and pour into baked pie crust. Make meringue out of left over egg whites and 1/4 cup sugar. Place on top of pie. Sprinkle left over coconut on top and brown in 325 degree oven.
*Nanny uses 1 small can evaporated milk and finish filling with white milk to make 2 cups milk.
