Fried Potatoes
- 2 Tbs. Canola Oil
- 2 Large Potatoes peeled and diced
- Salt to taste
- Pepper to taste
- Tarragon to taste (I don't use much)
- Lots of Mrs. Dash
- 1 medium onion cut in fourths
Instructions:
Heat Oil in large nonstick skillet on medium or medium-high. Add diced potatoes and sprinkle with all the other ingredients. Cover and cook until potatoes are tender and slightly browned. Stirring occasionally. When almost cooked, add chopped onion and cook until barely tender.
