Glazed Lemon Bread
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 1 1/2 cup flour
- 1 teaspoon baking powder
- pinch of salt
- 1/2 cup milk
- 1 tsp. lemon extract
- Rind of 2 lemons, grated
- 1/2 cup chopped pecans
GLAZE:
- Juice of 2 lemons
- 1/4 cup sugar
Instructions:
Cream shortening and sugar, add eggs and beat thoroughly. Sift together flour, baking powder and salt. Add alternately with milk to creamed mixture. Add lemon extract and grated lemon rind. Fold in chopped nuts. Pour into a greased and floured loaf pan and bake at 325 degrees for 60 to 65 minutes. Test with tooth pick.
GLAZE: Combine lemon juice and sugar in a saucepan and bring to a boil. Pour over bread while still in pan. Use toothpick to pierce bread so glaze will run into loaf.
