Richards Tomato Salsa with Avocado and Onion
- 1 lime
- 2 medium tomatoes, finely chopped
- 1 medium jalapeno, seeded and finely chopped
- 1/2 small red onion, chopped
- 1/4 avocado, peeled and cut into 1/4 inch pieces
- 2 tablespoons chopped fresh cilantro leaves
- 1 tablespoon red wine vinegar
- 1/4 teaspoon ground cumin
- chips for dipping (or veggies)
Instructions:
From lime, grate 2 teaspoons peel and squeeze 1 teaspoon juice.
In medium serving bowl, combine tomatoes, jalapeno, onion, avocado, cilantro, vinegar, cumin, lime peel and juice. Let stand at room temperature 15 minutes. Serve with chips or veggies.
NOTE: This was tasty as is but we thought it needed a bit of zip so we added a few drops of habanero sauce...some dried cayenne pepper would work well also.
Also, we didn't have a red onion so we used a vidalia.
