Glazed Pineapple Yams
- 1 15 1/4-ounce can Del Monte® Pineapple Chunks In Its own
Juice
- 1 1/2 pounds sweet potatoes or yams, peeled and cut into chunks
- 1/3 cup seedless raisins or dried cranberries
- 1/4 cup firmly packed brown sugar
- 3 tablespoons butter or margarine, melted
- 1 teaspoon ground cinnamon
Instructions:
1. Drain pineapple reserving 1/4 cup juice.
2. Combine reserved juice, sweet potatoes, raisins, sugar, butter and cinnamon in greased 9-inch square or 2-quart shallow baking dish.
3. Cover; bake at 375ºF, 35 minutes or until potatoes are tender.
4. Stir in pineapple; bake, uncovered, 5 minutes.
