Sweet Potato Casserole #2
- 3 cups sweet potatoes, mashed
- 1 cup sugar
- 2 eggs, beaten
- 1/2 cup evaporated milk
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 cup melted butter
- 1/4 teaspoon salt
Topping:
- 1 cup brown sugar
- 1/3 cup flour
- 1/3 cup butter, melted
- 1 cup chopped pecans
Instructions:
Mix all ingredients until smooth either by hand or mixer. Pour into 2 quart casserole dish. Mix all topping ingredients and sprinkle evenly over sweet potato mixture. Bake at 350 degrees for 30 to 40 minutes.
NOTES: You can use brown sugar also.
