  • Ingredients

  • 300g rice
    200g octopus
    200g shrimps
    200g shelled mussels
    100g red pimentos
    100g chopped lobster
    olive oil
    200g chopped calamari
    marjoram
    50g chopped onion
    seasoning
    fish stock 100g.peas
    200g minced chicken
    saffron
    300g minced veal
    veal stock


  • Method
  • Sweat off the onions without coloring. Mix in the chopped pimentos. Add the minced veal and chicken and cook for a few minutes. Add the rice and the saffron and sauté for five minutes. Add the fish and veal stock and cook until rice is ready. Meanwhile, in another pan, sauté all the fish ingredients with the marjoram and seasoning. Mix this mixture into the rice five minutes before the rice is ready. Garnish with a tomato rose, a sprig of parsley, and mussel shells.
