The grilled cheese sandwich holds a special place in the hearts of most Jamband fans. It has sustained many of us for days, if not weeks, on end. In fact, it is difficult to even think of the parking lot outside a show without craving a grilled cheese sandwich. It's almost Pavlovian.
With this in mind, I would like to make my contribution to this under-appreciated art form.
This is a recipe I have refined over many years of cooking for the pickiest eaters in the known universe, namely my children. I dare say though, I've never eaten one that I like better. I hope you enjoy it as much as we do. Bon Apetit.
Ingredients:
Bread,
2 Slices
Sliced American Cheese, 1 Slice
Sliced Swiss Cheese, 1 Slice
Butter or Margarine, 2 tsp
Mayonnaise or Miracle Whip, 1 tsp
Directions:
1)
Toast bread to light brown. Toasting the bread gives the sandwich better structure.*
2) Spread 1/2 tsp mayo or MW on one side of each piece of bread. The bread
should absorb most of the mayo.
3) Put cheese slices on bread and put sandwich together.
4) Heat a non-stick skillet to medium high heat.
5) Drop 1 tsp butter onto center of hot pan.
6) Place center of sandwich onto pool of hot butter.
7) Turn sandwich several times to spread butter evenly on bread.
8) While the first side is cooking, spread the top side with 1 tsp butter.
9) When first side is rich brown color, flip the sandwich and brown the other
side.
Viola! The perfect grilled cheese sandwich awaits you.
Variations: Use only Swiss, or only American. Or add a slice of lunch meat.
*Can you believe I'm actually using words like "structure" when talking about a grilled cheese sandwich?
