Southern Potato Salad
What you'll need
- 2&1/2 pounds of potatos (boiled to fork tender)
- 4 ribs of celery (diced very small or grated)
- 1 medium onion diced (preferablely sweet onion)
- 3/4 cup mayonaise or salad dressing (your choice)
- 3 hard boiled eggs diced
- 1/3 cup pickle relish or chopped pickles (again your choice)
- 3 teaspoons prepared mustard
Directions
In a Large bowl, while potatos are still warm* mix all ingredients.
Add salt and pepper to taste.
Refridgerate until ready to serve and enjoy.
* flavors mix better when potatos are warm
