LEFTOVER CHICKEN OR PORK
WITH CREAMY PASTA

This is my own concoction, so the measurements are approximate.

2 leftover chicken breasts or pork chops
(preferably grilled), chopped or ground
1 tablespoon olive oil or butter
1/2 large onion, chopped or in rings
2-3 cloves garlic, crushed or minced
1 can any flavor cream soup
1/2 to 1 can water to desired thickness
1/2 to 3/4 cup small ripe olives
(whole or sliced)
leftover cooked pasta salt and pepper to taste

In a skillet, heat the oil and caramelize
the onions over medium-low heat. Add the meat,
cook over medium heat til the meat is heated
through and beginning to brown.

Add garlic and cook, stirring occasionally
for a minute or two.

Add soup and water, stir til blended. Add olives
and pasta and heat through. I serve this with a salad
and garlic bread. Personally, I love it with grated
parmesan cheese sprinkled over the top.

All measurements are to taste.When I create,
I never measure.
