2 cups skimmed milk
Egg substitute to equal 4 eggs
1/4 cup honey
4 tablespoons maple syrup
1/2 cup whole wheat flour
3 tablespoons butter, cut in pieces
1 teaspoon vanilla
3/4 cup unsweetened flaked coconut
Preheat oven to 350°F.
Spray a 9-inch pie plate with Pam. In a blender,
combine all ingredients except coconut. Process
until smooth. Stir in coconut. Pulse a second or two.
Turn into prepared pie plate and bake on middle shelf
of oven until a knife comes out clean...about 50 minutes.
