HOLLY'S APRICOT DELIGHTS

I am sure you will make lots of these. I can't even wait for it to be rolled into a ball - i eat the mixture.

Ingredients:
250 grams dried apricots, diced
3 tablespoons honey
250 grams soft tofu (ricotta or cream cheese are also good)
3/4 cup rolled oats
2 tablespoons sunflower seeds
2 tablespoons sesame seeds
1 cup desiccated/shredded coconut

Method:
In a bowl, mash the tofu until it is crumbly.
Add remaining ingredients, except ½ of the coconut, in a large bowl.
Place remaining coconut in a flatish bowl.
Using your hands mix well until mixture becomes squishy and well combined.
Form mixture into walnut size balls.
Roll balls in coconut.
Repeat process until all mixture has been used.
Serve immediately or store in an airtight container in the fridge for up to a week.
Alternatively, freeze balls for up to 2 months until ready to eat.
