CHOCOLATE BANANA MOUSSE

(Makes 4 generous serves)

125 g dark chocolate
12 cups (about 2 ladies fingers) banana, mashed
1 tablespoon brandy
2 eggs, separated
200 ml thickened cream

Combine melted chocolate, mashed banana, brandy & egg yolks in a bowl & mix well.
Beat cream until soft peaks form & fold into chocolate mixture.
Beat egg whites until soft peaks form & gently fold into chocolate mixture.
Spoon mixture into ramekins or dessert glasses.
Chill.
Decorate with grated chocolate or mashed banana.
