CHRISTMAS MUFFINS

Makes 12

INGREDIENTS
300 grams of apricots, craisins and sultanas
¼ cup brandy or water
¾ cup fresh orange juice
½ cup grapeseed oil
½ cup apple juice concentrate
2 eggs
1 ½ cups unbleached white self-raising flour
½ cup wholemeal plain flour
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon cloves
¼ teaspoon ginger

METHOD
Soak dried fruit in brandy/water and orange juice for an hour or overnight.
Preheat oven to 180 degrees.
Line muffin tray with patty pans.
Add grapeseed oil and apple juice concentrate to the dried fruit.
Beat eggs and add to fruit mixture.
Sift flour and spices into fruit mixture and stir thoroughly.
Transfer mixture to muffin tray and cook for 25-30 minutes or until golden brown.
Test with a skewer to ensure it has cooked through.
Remove muffins from the tray and allow to cool on a wire rack.
