CRUMPETS

Hello:
The crumpets are such a basic food but my god they are good. As for the peanut butter cake - which comes from a fabulous book called Recipes to the Rescue - it is free of dairy products, wheat, yeast, sugar, corn, orange and nightshades making it perfect for people with allergies - and those that don't!

Ingredients:
4 cups plain flour
2 tablespoons baking powder
pinch of salt
1 teaspoon sugar
1 teaspoon dry yeast
3 cups lukewarm water

Method:
Sift flour, baking powder into a mixing bowl.
Add salt and sugar and stir.
Add yeast and warm water and beat quickly careful not to over beat.
Heat fry pan (to 260 degrees F/120 degrees C) or heavy-based low sided saucepan.
Grease egg-rings and place on pan.
When hot, fill approx three/quarters of each ring.
Allow to cook over a low heat for 10-12 minutes or until surface is covered with holes.
Remove rings, cover pan and cook for a further 3-5 minutes.
Remove from pan, allow to cool on a wire rack, before toasting.
Serve with butter, honey, vegemite or leave as is.
