FUDGE BROWNIES

Makes 6-8

Ingredients :
100 grams butter
100 grams good dark cooking chocolate, broken into pieces
225 grams brown sugar
4 eggs, beaten
175 grams plain flour, sifted
40 grams cocoa powder
1 tablespoon good ground coffee
¼ cup walnut pieces

Method :
In a double saucepan, slowly melt the butter and dark chocolate.
Beat in the sugar.
Beat in the eggs, one by one.
Add the flour, cocoa and coffee and walnuts.
Grease a slice tin (25 x 20 cm) and line base with grease-proof paper.
Transfer mixture to slice to 180 degree oven for 20 minutes.
Centre should be gooey when tested with a skewer.
Allow mixture to cool before cutting and transferring to a wire rack to cool completely.
Will keep in an airtight container and can be frozen. Allow an hour to thaw.
