Funky Minestrone

INGREDIENTS
olive oil
garlic, 2 cloves crushed
green chili, chopped
bay leaf
1 onion, chopped
1 leek, chopped
2 carrots, chopped
2 celery sticks, chopped
corn - fresh or can
borlotti beans - 1 can
1 can of tomatoes
2 tablespoons tomato paste
broccoli
cauliflower - equal amounts
2 potatoes, diced
1 sweet potato, diced
2 litres veg stock
1/2 cup risoni
continental parsley
2 tablespoons dried oregano
salt and pepper to taste

METHOD
heat oil in large saucepan.
add garlic, bay leaf and chili and salt and pepper to taste.
sauté leek and onion until soft.
Add all fresh veggies, stock, oregano and bring to the boil.
Simmer with lid on for 30 minutes.
Meanwhile, cook risoni separately. (approx. 10 minutes)
Stir through risoni, tinned corn, borlotti beans, parsley and serve.

Simple as that!
