GAZPACHIO INGREDIENTS 1 Spanish onion ½ kg ripe tomatoes ½ kg red peppers (capsicum) – approx two medium sized 1 continental cucumber, peeled 1 clove, garlic 6 basil leaves 2 tablespoons red wine vinegar 1 tablespoon olive oil Salt and Pepper to taste METHOD Chop onion, tomatoes, red peppers and cucumber into pieces. Place onion, tomatoes, red peppers, cucumber, garlic and basil into food processor and blend to required consistency. (Also, depending on the size of your processor you might do this in stages.) Add vinegar and oil and blend. Salt and pepper to taste. Place in fridge and chill for a couple of hours before serving. OPTIONAL: Add a cup of stock or water if you want a thin soup.
