WALNUT GREMOLATA

Ingredients:
1 cup of walnuts
1 lemon, zest and juice
1 clove of garlic
1 cup of parsley
¾ - 1 cup of good olive oil
salt and pepper

Method:
Combine all ingredients in processor and blend until a paste forms.
Can be used in a variety of ways:
- Spread on toast with roasted/grilled tomatoes
- Baked potato topping
- Accompaniment with roasted veggies
- As a pasta sauce –you might like to add a little of the cooking water to thin paste.
