| HOME FLIP | FLIP'S LEMON BUTTER Makes only 2 jars – eat slowly Ingredients: 3 large lemons, zested and juiced 185 grams unsalted butter 2 cups sugar 4 eggs Method: Melt butter slowly in a heavy-based saucepan. Add lemon zest and juice and sugar and stir on a low heat until sugar has dissolved. Place eggs in processor and beat for a minute or until pale. While still beating, add one tablespoon of hot lemony mixture to eggs. Repeat process with another tablespoon of hot mixture. This prevents eggs from curdling. Slowly add hot mixture to processor, still beating. Return mixture to saucepan and continue to heat slowly until mixture thickens and coats the back of a wooden spoon. Transfer to hot sterilised jars and cover. Allow to cool completely before placing lids on. Refrigerate.
