QUINOA SALAD
(Pron - Keen-wa)

Ingredients:

1 cup quinoa
2 cups boiling water
pinch of sea salt
1 beetroot, grated
1 carrot, grated
1 stick celery sliced thinly
¼ cup almondmeal
¼ cup sesame seeds
handful of parsley, chopped
1-2 tablespoons olive oil
1-2 tablespoons lemon juice
sea salt and pepper to taste

Method:

Place quinoa in a heavy-based saucepan or frypan and dry roast. Stir on medium-high heat until there is a nutty smell.
In another saucepan, boil 2 cups of water and a pinch of sea salt.
Add dry-roasted quinoa to water and simmer for 15-20 minutes, stirring often.
Allow quinoa to cool before combing with other ingredients.
