RED CABBAGE

Ingredients:
1 red cabbage
30 grams butter
2 onions, diced
3 tablespoons sugar
½ cup white vinegar
2 apples, Granny Smith, peeled and chopped
1 ½ cups water
12 peppercorns
2 bay leaves
8 whole cloves
pinch of seasalt

Method:
Shred cabbage.
Melt butter in a heavy based saucepan, add onion and soften until transparent.
Add sugar and cook over a medium heat for one minute.
Add cabbage, vinegar and apples, cover and cook for a further 10 minutes, stirring occasionally.
Add water and seasoning. Cover and simmer for 1 ½ hours.
