RED CABBAGE SALAD

Ingredients:

Equal portions of:
Red cabbage
Carrot
Cucumber
Red Pepper
Optional extras: radish
Nut sprinkle ie., poppy seeds, pine nuts, sunflower seeds

Dressing
Fresh Lime juice
Handful Coriander, chopped loosely
Tablespoon good Olive oil
Grind Black pepper

Method
Either thinly slice red cabbage and soak in apple juice for an hour or so or buy the packets of red cabbage in the continental sections of the supermarket.

Thinly slice carrot, cucumber and red pepper in equal proportions. (a peeler can assist with the carrot and cucumber)

Place all ingredients in a bowl.
Sprinkle with nuts (which you might like to roast in a hot shallow pan or a minute)
Drizzle dressing over and serve.

Perfect on it's own or as an accompaniment.
