BLACK RICE PUDDING

Serves 2-4

Ingredients:
1 cup of Black Glutinous Rice
200 grams palm sugar (or brown sugar)
pandan leaf
pinch of salt
2-4 cinnamon sticks (optional)
vanilla bean or essence
400g tin of coconut milk (lite coconut milk is fine to use)
8 cups of water

Instructions:
Soak rice in 2 cups of water for 6-12 hours
Add 6 cups of water, cinnamon sticks and pinch of salt to rice and cook on medium high flame for approx 40 mins (or until rice is soft) stirring often
Add coconut milk and palm sugar and simmer for 20 mins (until palm sugar has dissolved)

Serve with fresh fruit or puree

If you like your rice pudding thicker, add only 5 cups of water and cook on a slightly lower heat for approx 40 mins
