Flip's Spicy Baked Beans

INGREDIENTS
1 cup of haricot beans, dried
Tablespoon olive oil
1 onion, diced
1 clove garlic, finely chopped
1 small red chili, diced
½ red capsicum, diced
2 bay leaves
410 gram tin of chopped tomato
1 cup red wine or stock
Salt and pepper, to taste
Parsley, chopped
Extra water/stock/tomato sauce depending on consistency required.
Optional: parmesan to serve

METHOD
Soak beans overnight.
Next day, drain and cover with fresh water, bring to the boil and simmer for 45 minutes.
Soften garlic, onion, chili, celery, red pepper in a little olive oil and sweat for 5 mins.
Add bay leaves, tomatoes, red wine (or stock), beans and bring to the boil.
Salt and pepper to taste.
Simmer on low for an hour, covered. Check frequently to ensure you don't burn them.
When cooked, stir in parsley and sprinkle with shavings of parmesan.
