FEELS LIKE SUMMER STEW INGREDIENTS 1 red onion, chopped 1 clove garlic, chopped 1 red chili, chopped 2 cups broad beans 1 410 tin of tomoatoes 1/4 cup walnuts salt and pepper to taste parsley METHOD Saute and soften onion, garlic and chili and a small amount of olive oil. Meanwhile cook the beans in boiling water for two minutes before removing them from the pot and removing the outer shell (you can leave them in the shell but they can be a bit tough especially towards the end of the season). Add shelled or unshelled broad beans and tomoatoes to the onion. Simmer for 15 minutes or until sauce is reduced to desired consistency. You can add some stock or water to thin it out. Salt and pepper to taste. Sprinkle with parsley. NOTES Can be eaten on it's own or served with rice, potatoes.... |
