THAI CARROT SOUP

INGREDIENTS

1/5 kg carrots
1 Litre water or vegetable stock
Lemon grass (use a fresh stick and crush ends to release flavor but keep whole)
1 dried chili, chopped (use seeds only if you want it really hot)
knob of ginger, finely grated
Bunch of coriander, chopped roughly
¼ -1/2 cup yogurt or coconut milk

METHOD

Chop carrots and place in heavy-based saucepan with water, lemon grass, chili and ginger.
Bring to the boil then simmer until carrots are soft.
When the carrots are soft, remove from the heat.
Drain the water and set aside. Remove the lemon grass.
Puree the carrots, then add some of the water back into the carrot puree until you have the desired consistency.
Stir in the coriander and yogurt or coconut milk and serve.

Amaranth
Amaranth is considered "an ancient grain of the South American Aztec Civilisation and believed to posses supernatural nutritive powers". Sounds like a wonderfood!

You can buy a packet of Amaranth Cereal from some supermarkets and health food shops. This is puffed amaranth which you can use as a cereal topped with yogurt, fresh or dried fruit, nuts and milk or soy. It has a slightly spicy flavor. You can make a porridge like breakfast using hot water.

Amaranth is gluten free, is high in good quality protein, and is a good source of carbohydrate and fibre. The packet says it contains Omega 3 which is usually found in oily fish. You can buy amaranth flour to make cakes and muffins and biscuits.
