TOFU ICE-CREAM

Ingredients:
600 grams soft (silken) tofu
ΒΌ cup honey
2 teaspoons kirsch (or brandy/sherry)
punnett strawberries, hulled and quartered
passion fruit pulp, for serving

Method:
Blend strawberries in a medium mixing bowl.
Add remainder of ingredients (except passionfruit) to the bowl and beat well.
Transfer mixture to a pudding bowl, cover with plastic wrap and freeze until almost firm.
Remove from freezer and beat until smooth but not melted.
Cover with plastic and re-freeze.
Serve with passionfruit pulp.

NOTE:
For those who are not allowed diary food but love an icy treat.
