THAI TOFU MINI BURGERS
with Banana Dipping Sauce


Burgers:
375 grams firm tofu
1cm knob ginger
1 red chilli, de-seeded
1 lemongrass stalk
fingerful of fresh coriander
1 egg white
flour for coating

Dipping sauce:
2 small bananas
1/3 cup lemon juice
2 tablespoons sweet chilli sauce
fingerful fresh coriander

Blend burger ingredients until a smmoth paste is formed, approx 4 mins.
Put mixture in fridge for 30 mins.
Meanwhile, blend sauce ingredients & adjust to taste...maybe more chilli sauce.
Form mixture into mini burgers & lightly dust with flour. (white, brown, rice or potato)
Don't make them too thick or they won't cook through evenly.
Gently fry or griddle until golden brown.
Serve with banana dipping sauce.
