| HOME FLIP | TOFU SKEWERS Make approx. 10 skewers - depending on how big you buy the tofu slab and how many pieces you put on each skewer! Ingredients: Block of firm tofu or a 375 gm pack 2-4 tablespoons Peanut oil Tamari 2 knobs of fresh ginger, grated 10 spring onions, chopped 2 tablespoons sesame seeds Hoi Sin dipping sauce: 3/4 cup hoi sin sauce 2 tablespoons hot water 2 tablespoons dried fried spring onions, optional (just adds crunch) Tangy dipping sauce: 2 cloves garlic, crushed 1 fresh red chili, seeded and finely chopped 3 cm piece ginger, finely grated 1 teaspoon brown sugar 1 stalk lemon grass Juice of 1 lemon 2 teaspoons fish sauce (optional) Fresh coriander, finely chopped Skewers for serving Method: Chop tofu block in half width wise and then into bite size triangles. Into a fry pan or heavy based saucepan, place oil and warm before adding tofu. Sauté tofu for a few minutes, stirring carefully and constantly to prevent tofu from sticking. Add a dash (or two) of tamari and stir again. By now the tofu should be browning. Add spring onions, ginger and sesame seeds and cook through. Allow spring onions to wilt, the ginger to get a little crunchy and the sesame seeds to just brown. Take off heat and carefully arrange tofu on skewers. OR, fry off tofu in oil and tamari only and serve with tangy dipping sauce. Alternatively, combine tamari, ginger and hoi sin and marinate tofu pieces for a few hours or overnight. Wet skewers to prevent them from burning. Place tofu pieces on (wet) skewers before placing under a grill to cook for a few minutes on medium-high. Rotate skewers so tofu and Marinade warms completely. To serve, top with sesame seeds and chopped spring onions. For both the dipping sauces, simply combine listed ingredients and mix well | |||
