WALNUT TRUFFLES

Ingredients:

225 grams quality dark cooking chocolate
50 grams unsalted butter, diced and softened
4 tablespoons thickened cream
75 grams crushed walnuts
¼ cup drinking chocolate powder

Method:

Break chocolate into same-sized pieces and place in double saucepan.
Heat gently until just melted.
Remove from the heat and stir the butter, cream and walnuts into chocolate.
Set aside until mixture is completely cool.
Scoop out teaspoons of the mixture and using your hands form into balls.
Place in a single layer on a sheet of grease-proof paper.
Chill in refrigerator (for approx an hour or longer), then roll truffles lightly in drinking chocolate powder.
Return fridge for another hour (or more) before serving.
