1 packet plain biscuits |
125 grams butter |
1 packet Philadelphia cream cheese (room temperature) |
1 tin condensed milk |
Rind and juice of 1 lemon |
2 eggs (separated) |
Method
Using a food processor or blender, crush the biscuits until there are no lumps. Melt the butter and pour it into the biscuits. Mix the biscuits and butter thoroughly. Pour this mixture into a lined spring form tin. Using your knuckles, push the mixture into the corners of the tin and up the walls to create a base and sides. Place this in the fridge.
Mix the cream cheese and condensed milk until smooth. Add the egg yolks, lemon juice and lemon rind and stir until they are mixed well together.
Beat the egg whites until they form peaks and fold into the rest of the mixture.
Pour the mixture into the base and bake for 20-30 minutes or until a skewer comes out clean.
Allow to cool and top with whipped cream and/or fruit.
