WHO WILL EAT MINIMUM-WAGE LEAP?

  Some Edmonton restaurants will tighten their belts to swallow a government-ordered pay hike for minimum-wage earners.
 The Swiss Chalet at 10010 132 Ave. will spend an additional $1,200 to $1,500 each month on wages when the minimum wage is raised to $5.90 from $5 an hour, manager Dwayne Tustin said.
 "You can't cut back on servers because then you under-serve guests," he said.
 Tustin said the money to pay the wage hike will come from the operations budget.
 "We'll have to run tighter that's all," he said.
 Alberta boosted its minimum wage Friday, bringing it from Canada's lowest to fourth-highest. The increase will be phased in over a year, beginning in October.
 Tustin said menu prices likely won't increase because they are set at head office and are the same across the country, even though some provinces have a minimum wage higher than $5.90.
 However, the Mr. Sub at 16212 Stony Plain Rd. probably will raise prices to make up for the extra 90 cents an hour, said manager Hatem Naboulsi.
 "The way it's been going we're barely surviving, but I know the people deserve (the raise)," he said. "When we have to pay more money to keep the doors open, the customer has to pay more."
