American Pizza
Ingredients:
1) 1 Dough Ball
2) 2 oz. Tomato
3) 15-20 slices of Pepperoni
4) 1 1/2 oz. Mozzarella Cheese
5) Salt and Pepper
6) Oregano
7) Oil
Preparation:
1) Spread the pepperoni over the tomato.
2) Distribute the cheese evenly.
3) Season with salt, pepper, oregano, and oil.
Points to remember:
1) Make sure the pepperoni pieces are separated
and not placed on the
pizza one on top of the
other.
Margherita Pizza
Preparation:
1) Arrange the cheese evenly on the tomato.
2) Season with salt, pepper, oregano, and oil.
Points to remember:
1) There are so few ingredients on this pizza
that
it is essential that
the distribution is even.
2) This pizza is greatly improved with one or
two
leaves of fresh basil
placed in the centre of the
pizza after cooking.
La Reine Pizza
Preparation:
1) Break the ham into four and place evenly
on the
tomato, halfway between
the centre and the rim
of the pizza.
2) Spread the mushrooms over the pizza.
3) Place the olives about 2" from the rim of
the
pizza.
4) Distribute the cheese evenly over the pizza.
5) Season with salt, pepper, oregano, and oil.
Points to remember:
1) Try not to get too much cheese on the ham
as
this stops water evaporation.
2) Try not to lay the ham on any mushrooms for
the same reason.
Mozzarella and Tomato Salad
Ingredients:
1) 4 oz. Fresh Tomato (sliced)
2) 4 oz. Baby Mozzarella
3) 6 Olives
4) Salt
5) Pepper plus two extra peppers from the
pepper mill.
6) Oil plus extra oil.
Preparation:
1) Place the sliced tomato around the edge
of a 10" plate.
2) Slice the cheese into three and arrange the
three slices in the
centre of the tomato.
3) Place the olives evenly all over the plate.
4) Season with salt, plenty of pepper (from
the mill) and extra
oil.
Points to remember:
1) This salad should always be accompanied
by Dough Sticks.
Slice the tomato thinly.
2) Arrange the ingredients attractively.
3) If possible, this dish is greatly improved
by
a leaf of fresh basil
on the cheese.
Salad Nocoise Pizza Express
Ingredients:
1) 1 Pizza Express Side Salad
2) 2 1/2 oz. Tuna Fish
3) 2 Anchovy Fillets
4) 6 Olives
5) 1 Hardboiled Egg
6) 12 Capers
Preparation:
1) Make slight hollow in the centre of the salad.
2) Break tuna into chunks and place in hollow.
3) Segment Egg
4) Break each anchovy into two pieces.
5) Place egg, anchovies, capers, and olives
on
the lettuce.
Serving:
1) Salad is automatically served with 1 oz.
PizzaExpress dressing.
2) Serve on a pizza plate with half opened napkin
between the plate and
the bowl.
Points to remember:
1) The egg should be boiled for seven minutes
and then cooled under
cold water.
2) This salad should not look too symmetrical.
3) Do not cover the tuna with other ingredients.
