Chocolate Dipping

1/2 1b Covering Chocolate
1 oz Unsweetened Chocolate
1/2 oz Cocoa Butter
1/4 oz Paraffin Wax

Place all ingredients into a double boiler over warm water.
Do not let water become hot.
Stir constantly until melted.
Beat until cool and allow to set.
Place over warm water again and melt until just thin enough for dipping.
Test by putting a little of the coating on waxed paper.
It should set and be glossy in 3 minutes.
Use a dipping fork to lift centers in an out.
