Chocolate Turtle Cheesecake

7 oz Caramels
1/4 c Evaporated Milk
3/4 c Pecans, chopped, divided
1 Chocolate Crumb Pie Crust
6 oz Cream Cheese, softened
1/2 c Sour Cream
1 1/4 c Milk
1 sm pkg Instant Chocolate Pudding
1/2 c Fudge Topping

Melt caramels and milk in heavy saucepan over low-medium heat stirring constantly until smooth.
Stir in 1/2 c chopped pecans. Pour into pie crust.
Combine cream cheese, sour cream, and milk in a blender processing until smooth.
Add pudding mix and process for about 30 seconds longer.
Pour pudding over caramel layer, covering evenly.
Loosely cover and chill until set, about 15 minutes.
Drizzle fudge topping over pudding layer.
Sprinkle remaining pecans over top.
Store in refrigerator.
