Coffee Chip Fudge

1 1/2 c Brown Sugar, firmly packed
1 1/2 c Sugar
1 c Milk
1/2 c Light cream (Half and Half)
2 T Light Corn Syrup
2 T Instant Coffee Granules
1/8 t Salt
3 T Butter or Margerine, softened
1 t Vanilla
6 oz Semisweet Chocolate Chips
1/2 c Pecans, chopped

Combine sugars, milk, cream, corn syrup, coffe granules, and salt in a large heavy saucepan. Bring to a boil over medium heat, stirring constantly. Continue cooking without stirring to 234 degrees on a candy thermometer (soft ball stage).

Remove from heat and add butter and vanilla. DO NOT STIR. Cool to 110 degrees. Beat until fudge loses it's gloss and begins to thicken. Add chocolate chips and pecans. Stir just to mix. Pour into a buttered 9 inch square pan. Cool completely and cut.
