Double Chcocolate Mint Cookies

2 1/2 c Butter
4 c Sugar
4 Eggs
2 t Vanilla
1 t Peppermint Extract
4 c Flour
1 1/2 c Cocoa
2 t Baking Soda
1 t Salt
2 c Mint Chocolate Chips
1/2 c Peppermint Candies,
crushed into small pieces

Preheat oven to 350 degrees.
Cream together butter and sugar. Beat in eggs, vanilla and peppermint.
Sift together dry ingredients and mix into sugar mixture.
Stir in mint chocolate chips and peppermint candies.
Chill dough for 1 hour.
Drop by teaspoonfuls onto cookie sheets sprayed with nonstick spray.
Bake for 8-10 minutes or until centers are almost set.
Cool slightly. Remove to wire rack and cool completely.
