Light Mocha Moons

1/4 c Margerine, softened
1/3 c Sugar
1/4 c Brown Sugar, firmly packed
1/4 c Frozen Egg Substitute, thawed
1 c Flour
1/2 t Baking Soda
1/4 t Salt
1/4 c Cocoa
1 T Instant Coffee Granules
1/3 c Mini Chocolate Chips

Preheat oven to 375 degrees.
Beat margerine at medium speed with electric mixer until creamy. Gradually add sugars beating well. Add egg substitute beating well.
Combine flour, baking soda, salt, cocoa, and coffee granules. Add to margerine mixture. Beat until just blended. Stir in chocolate ships.

Drop dough by level tablespoonfuls 2 inches apart onto cookie sheet coated with nonstick spray.
Bake for 5-6 minutes.
Remove from cookie sheets and let cool completely on wire racks.
