Apple Spice Muffins
Ingredients                                     Crumb Topping
2 cups Bisquik mix                            2 Tbsp. butter
1 large egg                                        1/3 C brn sugar
3 oz. CoolWhip                            1/3 cup Bisquik mix
1/4 C sugar                                        2 tsp. cinnamon
1 tsp. apple pie spice                        1/3 C oatmeal
10 oz. apple pie filling                     mix all with fork

Preheat oven to 350. Cut pie filling into small pieces.  In large bowl, mix together egg, sugar, apple pie spice, pie filling and Cool Whip.  Add Bisquik and mix well.  Batter will be lumpy.  Spoon into muffin cups to approx. 3/4 full.  Top with crumb topping.
Bake for 20 minutes.




Baked Honey Apples
2 1/4 C.  water
3/4  C. brown sugar
3 tbsp. honey
6 large apples
1 cup golden raisins

In saucepan, bring water, brown sugar and honey to boil.  Remove from heat.
Core apples, peel top 1/3.  Place in ungreased baking dish.Fill with raisins.  Pour sugar mixture over apples.  Bake uncovered at 350 for 1 hour, basting occasionally.  Serve with vanilla  ice cream.

Easy Coconut Pie

Ingredients
2 cups milk            1 cup sugar
4 eggs                 1/2 cup flour
6 tbsp butter        1 tsp vanilla
1/2 tsp salt         1 cup coconut

Combine all ingredients EXCEPT coconut.  Mix well, or blend.  Add coconut and mix or blend again. Pour into greased 10 in pie plate. Bake at 350 for 50-55 minutes.  6 servings.

Berry Cobbler  the easy way!

Ingredients
2 cups berries (fresh or frozen)
1 cup sugar
1/2 cup butter (divided)
1 box yellow cake mix

Cut butter (all but approx. 2 tbsp) into cake mix, until crumbly.  Mix berries and sugar.  In a greased baking dish, pour berries mixture and sprinkle cake mix. Add remaining butter in pats to top.  Bake for 35-40 minutes, or until bubbly.   Okay to use prepared pie filling, but eliminate sugar.
