Traditional Cloutie Dumpling

1 1/2 lbs self raising flour

1 lb mixed fruit

1/2 lb suet or margarine

11/2 tablespoons mixed spice

2 tablespoons syrup or treacle

1 heaped tablespoon baking soda

1/2 lb sugar

Milk

Mix all of the dry ingredients.

Mix the syrup with a little milk and add to the mixture. Stir in gradually more milk until it reaches a soft consistency.

Place on a white square cloth which has been well floured. Gather ends together leaving room for expansion. Tie in a tight knot.

Place on a plate in a large saucepan of boiling water. Boil gently for two hours.

Turn out and dry in a medium oven.
