Baked Ziti

Basic dinner for friends is what this is. The tomato sauce in question is my
 All-Day Tomato Sauce but you can also use a basic marinara sauce.

This recipe is based somewhat on the Cooks Illustrated recipe in their recent
Italian Classics book in philosophy and technique, but uses more cheese and is 
generally a more involved recipe. 

1 lb ziti or penne
4 c homemade tomato sauce 
12 oz mozarella cheese, shredded
1/4 c shredded parmesan cheese

Preheat oven to 350F.

Cook the pasta according to the package directions, making sure that it is no 
more than al dente and preferably slightly underdone. Reserve 1/4 c of the pasta
water when you drain the pasta. 

Lighly grease a 9x13 baking dish or the equivalent. After draining the pasta, 
return it to the pot with the reserved pasta water and add tomato sauce. Toss 
pasta in sauce, then spread half the sauced pasta in the bottom of the pan. 
Spread half the cheese on top, then put the rest of the pasta on the top; top 
off with cheese and bake in 350F oven for 20-30 minutes or until sauce is 
bubbling. 

Variation: Brown some crumbled sausage or hamburger meat and mix in to the pasta
with the sauce.
